  • 1 cup unsalted butter, cold and cubed
  • ½ tsp salt
  • Ice water (approximately 6-8 tbsp)
  • ¾ cup granulated sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 6 cups Granny Smith or Honeycrisp apples, peeled and sliced
  • 2 tbsp lemon juice

Instructions

  1. Prepare the crust: In a large bowl, mix flour and salt. Cut in cold butter until coarse crumbs form. Gradually add ice water until dough holds together. Divide into two discs, wrap in plastic wrap, and chill for at least one hour.
  2. Preheat oven to 425°F (220°C).
  3. Make the filling: Toss apple slices with sugar, cinnamon, nutmeg, and lemon juice in a bowl. Let sit while dough chills.
  4. Roll out one disc of dough on a floured surface to fit your pie dish. Place in dish and trim excess.
  5. Fill the crust with apple mixture, dot with small pieces of butter, then cover with rolled-out second disc of dough. Seal edges and cut slits for steam.
  6. Bake for 45-50 minutes until golden brown and bubbly; cool slightly before serving.
