  • 1 lb. ground chicken
  • 1/4 cup teriyaki sauce
  • 1/2 cup panko breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 2 cups shredded cabbage
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 cup chopped green onions (optional)
  • 2 tablespoons avocado oil for frying
  • 4 brioche buns
  • 1/4 cup yum yum sauce (or your choice of sauce)

Instructions

  1. Prepare the sesame slaw by mixing shredded cabbage, toasted sesame oil, rice vinegar, sugar, and salt in a bowl. Adjust seasoning as needed.
  2. In a large bowl, combine ground chicken, teriyaki sauce, panko breadcrumbs, garlic powder, and salt. Mix until combined and form into four patties.
  3. Heat avocado oil in a skillet over medium heat. Cook each patty for 3-5 minutes per side until golden brown and cooked through (165°F).
  4. Toast the brioche buns cut side down in the same skillet for about 30 seconds.
  5. Assemble by spreading yum yum sauce on both halves of the bun, adding the chicken patty, and topping with sesame slaw.
