  • 4 boneless, skinless chicken breasts (1.5 lb)
  • 1 cup walnuts, finely chopped
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1 medium fennel bulb, thinly sliced
  • 1 cup red cabbage, thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper. In one bowl, beat the eggs; in another, mix chopped walnuts and breadcrumbs.
  3. Dip each chicken breast into the egg mixture, then coat thoroughly with the walnut-breadcrumb mix.
  4. Place coated chicken in the baking dish, drizzle with olive oil, and bake for 25-30 minutes until golden brown and cooked through (internal temperature of 165°F/75°C).
