  • 2/3 cup full-fat Greek yogurt
  • 2 tbsp olive oil
  • 3 onions (minced)
  • 34 garlic cloves (chopped)
  • 4 medium carrots (peeled and small diced)
  • 16 oz fresh mushrooms (sliced)
  • 2 tbsp tomato paste
  • 2 tbsp gluten-free flour
  • 2 cups vegetable broth
  • 2 cups frozen peas
  • 2 tbsp balsamic vinegar

Instructions

  1. Boil the potatoes in water until tender (15-20 minutes). Drain and mash with Greek yogurt, salt, and pepper.
  2. In a skillet, heat olive oil over medium heat. Sauté minced onions, garlic, and carrots for about 3-4 minutes.
  3. Add sliced mushrooms and fresh herbs; cook until softened.
  4. Stir in tomato paste and gluten-free flour. Gradually add vegetable broth while stirring; let simmer for about 10 minutes.
