  • ¾ cup oat or almond milk
  • ⅔ cup sugar
  • 3 tablespoons olive oil
  • 2 teaspoons vanilla bean paste
  • 1 ¼ cups pastry flour (or gluten-free blend)
  • ½ teaspoon salt
  • ½ teaspoon cardamom
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ cup vegan butter
  • ¼ cup shortening
  • 1 teaspoon vanilla bean paste
  • ½ teaspoon rosewater
  • 1 ½ cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Line a cupcake tin with liners.
  2. In a large bowl, whisk together oat/almond milk, sugar, olive oil, and vanilla until smooth.
  3. In another bowl, mix flour, salt, cardamom, baking powder, and baking soda.
  4. Gradually fold dry ingredients into wet mixture until just combined.
  5. Fill cupcake liners two-thirds full with batter and bake for about 22 minutes until a toothpick comes out clean.
  6. For the frosting, cream vegan butter and shortening until fluffy. Gradually add powdered sugar and rosewater until desired consistency is reached.
  7. Once cooled, frost the cupcakes and garnish as desired.
