  • 1 leg of lamb (bone-in, 78 pounds)
  • 10 cloves garlic (cut into slivers)
  • 2 onions (quartered)
  • 3.5 teaspoons salt
  • Freshly ground black pepper
  • 2 sprigs fresh rosemary
  • 1 cup water
  • 1/3 cup fresh lemon juice
  • 1/4 cup olive oil
  • 2 teaspoons dried crushed oregano

Instructions

  1. Prepare the marinade by mixing lemon juice, olive oil, oregano, salt, and pepper in a bowl. Insert slivers of garlic into small cuts in the lamb and pour the marinade over it. Let it marinate for at least an hour or overnight in the fridge.
  2. Preheat your oven to 325°F (160°C). Place quartered onions in a roasting pan.
  3. Place the marinated leg of lamb on top of the onions, add water, and cover tightly with aluminum foil. Roast for about 4 hours or until tender.
  4. Remove foil during the last 30 minutes to achieve a golden crust, basting occasionally with pan juices.
  5. Let the lamb rest for about 20 minutes before carving to ensure juiciness.
