  • ¾ cup whole milk ricotta cheese
  • ¼ cup grated Parmigiano-Reggiano
  • ½ lb mini heirloom tomatoes (halved)
  • 3 tablespoons fresh basil (minced)
  • Olive oil
  • Flaky sea salt

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Roll out the puff pastry and cut it into 9 equal rectangles.
  3. In a bowl, mix together ricotta, Parmigiano-Reggiano, minced basil, garlic powder, salt, and pepper.
  4. Place the pastry rectangles on a baking sheet and add about 1½ tablespoons of cheese mixture on each piece.
  5. Top generously with halved heirloom tomatoes and brush with olive oil.
  6. Bake for approximately 20 minutes until golden brown, rotating halfway through.
