  • 1 teaspoon garlic (minced)
  • 1 small yellow onion (minced)
  • 1/2 cup carrots (sliced)
  • 1/2 cup celery (sliced)
  • 34 cups chicken broth (or vegetable broth)
  • 15 oz can crushed tomatoes
  • 12 oz can tomato paste
  • 2 cups cooked orzo
  • 2 handfuls fresh baby spinach leaves

Instructions

  1. In a Dutch Oven over medium-high heat, melt the butter or olive oil. Sauté garlic until fragrant.
  2. Add onion, carrots, and celery; season lightly with salt and pepper. Sauté for about 3-5 minutes until softened.
  3. Pour in broth, crushed tomatoes, tomato paste, and seasonings; stir to combine.
  4. Add the parmesan rind (optional), cover, and simmer for 15-20 minutes.
  5. Cook orzo according to package instructions; drain and set aside.
  6. Just before serving, stir in fresh spinach until wilted. Serve over orzo with crusty bread on the side.
