  • 8 Granny Smith apples
  • 2 tbsp butter
  • ½ cup sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp allspice
  • ¼ tsp salt
  • juice of ½ lemon
  • 2 ½ cups flour
  • 1 tsp salt
  • 1 cup cold butter (diced)
  • ½ cup ice water
  • ¼ cup butter
  • ½ cup brown sugar
  • ¼ cup heavy cream
  • 4 tbsp cornstarch
  • 1 egg
  • 1 tbsp water
  • 2 cups milk
  • 3 egg yolks
  • â…“ cup sugar
  • 1 tbsp cornstarch
  • pinch salt
  • 2 tsp vanilla extract
  • 1 tbsp butter

Instructions

  1. Preheat oven to 375°F (190°C). Peel and slice the apples, then toss them with lemon juice, sugar, cinnamon, nutmeg, allspice, and salt in a large bowl.
  2. For the crust, combine flour and salt in a bowl. Cut in cold butter until crumbly; gradually add ice water until dough forms. Chill for 30 minutes.
  3. Roll out half of the dough and line your pie dish. Fill with apple mixture.
  4. Roll out remaining dough for the top crust; cover pie and seal edges.
  5. Bake for 20 minutes until golden brown. While baking, prepare the toffee sauce by melting butter with brown sugar and cream in a saucepan.
  6. Whisk together egg yolks, milk, sugar, cornstarch, salt, vanilla extract, and butter in another pot until thickened; pour over baked apples after cooling slightly.
