  • 2 large eggs
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325°F and toast shredded coconut on a baking sheet for 5-7 minutes until lightly golden.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix coconut milk, eggs, melted coconut oil, and vanilla until smooth.
  4. Combine wet and dry ingredients gently until just combined; lumps are okay.
  5. Heat a griddle over medium-low heat, coat with cooking spray, and pour about 1/3 cup of batter per pancake. Top with toasted coconut.
  6. Cook for about 2 minutes until bubbles form; flip and cook until golden brown.
