  • 3 cups Buttermilk
  • 2 teaspoons Vanilla extract
  • 1/2 cup Chopped macadamia nuts
  • Sliced Bananas
  • 114 ounce Can Coconut Milk
  • 1/2 cup Sugar
  • 2 Tablespoons Light corn syrup
  • Pinch of Salt

Instructions

  1. Preheat oven to 250°F and toast sweetened flaked coconut on a baking sheet for 18–20 minutes until golden brown.
  2. In a large bowl, combine flour, baking powder, and salt.
  3. Mix in melted butter, sugar, eggs, buttermilk, and vanilla until just combined.
  4. Heat a skillet over medium-low; pour batter onto the griddle and sprinkle with toasted coconut.
  5. Cook until bubbles form on top; flip and cook until golden brown.
  6. In a saucepan, whisk together coconut milk, sugar, and corn syrup over medium heat until smooth and slightly thickened.
