  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/4 cup cooled espresso
  • 8 oz mascarpone cheese (softened)
  • 1/2 cup heavy cream (cold)
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Cream together softened butter and granulated sugar until fluffy. Beat in eggs one at a time.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to the butter mixture while alternating with milk and espresso.
  4. Fill liners two-thirds full with batter and bake for 15-20 minutes or until a toothpick comes out clean.
  5. While cooling, prepare espresso syrup by heating espresso with sugar until dissolved; brush over warm cupcakes.
  6. Beat mascarpone until smooth, then gradually add cold heavy cream and powdered sugar until soft peaks form. Frost cooled cupcakes and dust with cocoa powder.
