  • 2 lbs chicken thighs or breasts (cut into 1" cubes)
  • 2 tbsp cornstarch
  • 1 cup water
  • 1/3 cup brown sugar
  • 1/3 cup low-sodium soy sauce
  • 2 cloves garlic (minced)
  • 1 tbsp rice vinegar
  • 1/2 tbsp fresh ginger (minced)
  • 1 tbsp honey
  • 1/2 tsp sesame oil
  • 8 skewers
  • Sesame seeds
  • Chopped green onion

Instructions

  1. Prepare the teriyaki sauce by combining cornstarch with water in a small bowl. In a medium saucepan, mix remaining ingredients with cornstarch mixture and simmer until thickened.
  2. Allow sauce to cool, then marinate cubed chicken in half of the sauce for at least 30 minutes in the refrigerator.
  3. Preheat the grill to medium heat. Skewer marinated chicken pieces.
  4. Grill skewers for about 20-30 minutes, turning every few minutes and basting with reserved sauce until cooked through (internal temperature reaches 165°F).
  5. Garnish with sesame seeds and green onions before serving.
