  • 2 Large Zucchini
  • 1 tablespoon Olive Oil
  • 1 Small Onion (finely chopped)
  • 1 pound Ground Lean Turkey
  • 1 tablespoon Taco Seasoning
  • ½ Cup Black Beans (rinsed)
  • ½ Cup Canned Corn (or fresh)
  • ¾ Cup Tomato Sauce
  • 1 tablespoon Hot Sauce
  • ½ Cup Shredded Cheese
  • Cooking Oil Spray

Instructions

  1. Preheat your oven to 350°F.
  2. Cut zucchini into 2-inch thick slices and scoop out about 1/4 inch of flesh to create cups.
  3. Bake zucchini cups on a parchment-lined tray for 15 minutes.
  4. In a pan, heat olive oil and sauté chopped onion and minced garlic for 3-4 minutes.
  5. Add ground turkey; cook until browned (6-8 minutes). Stir in taco seasoning, black beans, corn, tomato sauce, and hot sauce; simmer for 4-5 minutes.
  6. Stuff each zucchini cup with the filling, top with cheese, and bake for another 10-15 minutes until melted.
