  • 0.25 cup granulated sugar (for cream cheese mixture)
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract (for cream cheese mixture)

Instructions

  1. Preheat your oven to 375°F and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt; set aside.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar until smooth. Beat in eggs, vegetable oil, and vanilla extract.
  4. Gradually incorporate the dry mixture into the wet ingredients until just combined.
  5. In another bowl, beat cream cheese until smooth; then add sugar, egg yolk, and vanilla extract until well combined.
