  • pounds sweet potatoes
  • ½ tablespoon extra virgin olive oil
  • ½ teaspoon salt
  • 3 tablespoons seeds (pumpkin, sesame, sunflower)
  • ¼ cup dried cranberries
  • ½ red onion, thinly sliced
  • 5 cups arugula
  • 3 ounces feta cheese
  • 3 tablespoons extra virgin olive oil (for dressing)
  • 3 tablespoons lemon juice
  • 2 tablespoons mustard
  • 1½ tablespoons maple syrup
  • 1 teaspoon dried oregano
  • ½ teaspoon salt (or more to taste)
  • ⅛ teaspoon black pepper (or red pepper flakes)

Instructions

  1. Preheat oven to 400°F (200°C). Peel and cube sweet potatoes; toss with olive oil and salt. Roast for about 30 minutes until fork-tender.
  2. In a non-stick pan over low heat, toast seeds and dried cranberries for about 2 minutes until fragrant.
  3. Whisk together dressing ingredients: olive oil, lemon juice, mustard, maple syrup, oregano, salt, and pepper.
  4. On a serving platter, layer arugula followed by sweet potatoes, onions, feta, toasted seeds, and cranberries. Drizzle with half the dressing; serve with remaining dressing on the side.
