  • 2 medium sweet potatoes (about 1 lb), peeled and sliced into 1/4-inch rounds
  • 1 lb ground lamb or beef
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 14 oz canned crushed tomatoes
  • Salt and pepper to taste
  • 1 tsp dried oregano
  • Pinch of nutmeg
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 2 cups whole milk, warmed
  • 2 large eggs, beaten

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté chopped onion until translucent. Add minced garlic and ground meat; cook until browned. Stir in crushed tomatoes, salt, pepper, oregano, and nutmeg. Let simmer for about 10 minutes.
  3. In a saucepan on low heat, melt butter and whisk in flour for two minutes. Gradually add warmed milk while whisking continuously until thickened. Remove from heat and stir in beaten eggs.
  4. Layer half of sweet potato slices in a greased baking dish. Top with half of the meat sauce followed by half of the béchamel sauce. Repeat layers using remaining ingredients.
  5. Cover with foil and bake for 30 minutes, then uncover and bake for an additional 15 minutes until golden brown.
