  • 3 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1.5 teaspoons kosher salt
  • 2 teaspoons paprika
  • 2 teaspoons sumac
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 2/3 cup Greek yogurt or skyr
  • 2 tablespoons mayonnaise
  • 2 chipotle peppers in adobo
  • 1 teaspoon chili powder
  • 1 clove garlic
  • 1.5 tablespoons honey
  • 1 tablespoon olive oil
  • Kosher salt (to taste)
  • Chopped cilantro (for garnish)
  • Cotija cheese (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C). Wash, peel, and cut sweet potatoes into uniform fries.
  2. In a large bowl, combine the fries with olive oil, kosher salt, paprika, sumac, ground cumin, and garlic powder. Toss until well-coated.
  3. Spread the seasoned fries in a single layer on a lined baking sheet. Bake for about 30 minutes, flipping halfway through.
  4. While the fries are baking, blend Greek yogurt, mayonnaise, chipotle peppers, chili powder, garlic clove, honey, olive oil, and kosher salt until smooth to make the chipotle sauce.
  5. Once cooked, remove fries from the oven and serve hot with the chipotle sauce, garnished with chopped cilantro and cotija cheese if desired.
