  • 5 ears fresh corn (shucked)
  • 2 medium roma tomatoes (diced)
  • 1 medium English cucumber (diced)
  • 1 medium avocado (diced)
  • 1/2 medium red onion (minced)
  • 1/2 cup chopped fresh basil
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon apple vinegar vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the Corn: Boil a large pot of water and cook shucked corn for about 5 minutes until tender. Remove and let cool.
  2. Prepare Veggies: Dice tomatoes, cucumber, avocado, and mince red onion while corn cools.
  3. Mix Together: Cut kernels from cooled corn and combine with diced veggies and herbs in a mixing bowl.
  4. Make Dressing: Whisk olive oil, apple cider vinegar, apple vinegar vinegar, salt, and pepper in a small bowl.
  5. Combine & Serve: Pour dressing over the salad mixture and toss gently. Serve immediately or chill briefly.
