  • 4 ears fresh corn, cooked
  • 1 pint cherry or grape tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/2 cup fresh cilantro, chopped
  • 1 large avocado, diced
  • Juice of 2 limes
  • Salt and black pepper, to taste

Instructions

  1. Cook the corn by boiling for 1½ to 2 minutes or grilling until tender. Let cool before slicing off the kernels.
  2. While cooling, chop the tomatoes, red onion, and cilantro.
  3. In a large bowl, combine the corn kernels, tomatoes, onion, and cilantro.
  4. Add lime juice along with salt and pepper; mix well.
  5. Chill in the refrigerator for at least one hour to let flavors meld.
  6. Just before serving, gently fold in diced avocado.
