  • 1.5 lbs ground hamburger
  • 6 taco-sized flour tortillas
  • 56 ears corn (husked and removed from the cob)
  • 3/4 cup mayonnaise
  • 1 garlic clove (minced)
  • 1/3 cup sliced scallions
  • 1/3 cup grated cojita cheese
  • 1/4 cup minced cilantro (large stems removed)
  • 1 jalapeno (diced)
  • 1/21 tsp chili powder (to taste)
  • 1/21 tsp Tajin (to taste)
  • 1/4 tsp salt
  • 2 tablespoons olive oil
  • 3/4 cup sour cream
  • 1 heaping tablespoon dry ranch seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1 tbsp lime juice (fresh)
  • 1/2 cup pickled jalapenos
  • 2 tablespoons juice from pickled jalapenos
  • 3/4 cup cilantro leaves (large stems removed)

Instructions

  1. Prepare the corn topping: Sauté husked corn in olive oil until golden. Combine with mayonnaise, garlic, scallions, cojita cheese, cilantro, jalapeno, chili powder, and salt.
  2. Cook the burgers: Form ground hamburger into balls and smash them in a hot skillet. Season with salt and pepper while cooking.
  3. Assemble tacos: Warm tortillas, then add a smash burger followed by a generous scoop of the corn topping.
  4. Drizzle sour cream mixed with ranch seasoning on top and garnish with pickled jalapenos and cilantro.
