  • 1.5 pounds flank steak
  • 12 oz corn (grilled or frozen)
  • 3 bell peppers (red, green, orange), sliced
  • 1/2 red onion, sliced
  • 2 cups cilantro lime rice
  • 1 cup cherry tomatoes, quartered
  • 2 tablespoons lime juice
  • 1 tablespoon garlic, minced
  • Olive oil
  • 12 jalapeños, diced
  • 2 teaspoons lime zest
  • 1/2 cup cilantro, roughly chopped
  • 1/4 teaspoon kosher salt, more to taste
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon chili powder (optional)
  • 1/4 teaspoon cumin (optional)
  • 23 tablespoons chicken broth, more if needed
  • 2 tablespoons fajita seasoning
  • additional kosher salt and ground black pepper, to taste

Instructions

  1. Prepare Corn Salsa: Mix corn, cherry tomatoes, diced jalapeños, red onion, lime zest and juice, cilantro, salt, pepper, chili powder, and cumin in a bowl.
  2. Marinate Steak: Season flank steak with salt and pepper. In a bowl, whisk together olive oil, lime juice and zest, chili powder, cumin, minced garlic, soy sauce (or Tamari), and cilantro. Pour over steak and marinate for at least 30 minutes.
  3. Sear Steak: Heat oil in a skillet over medium-high heat; sear the marinated steak for about 4-5 minutes on each side until browned. Let rest before slicing.
  4. Cook Veggies: In the same skillet, add chicken broth and sauté garlic until fragrant; add onions and bell peppers with fajita seasoning until tender.
  5. Assemble Bowls: Layer cilantro lime rice in bowls topped with sliced steak, sautéed veggies, corn salsa, guacamole (or avocado), sour cream (or cilantro lime sauce), fresh tomatoes, cilantro sprigs, and lime wedges.
