  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili powder (adjust to taste)
  • 1 can (14 oz) coconut milk
  • 1/2 cup chicken broth
  • 1/2 cup fresh basil, chopped
  • Juice of 1 lime
  • 2 cups cooked rice (white, brown, or jasmine)

Instructions

  1. Prepare the rice according to package instructions.
  2. In a large skillet over medium heat, warm the olive oil. Season chicken breasts with salt and pepper and cook until golden brown on both sides; remove and set aside.
  3. In the same skillet, sauté chopped onion until softened (about 3–4 minutes). Add minced garlic and grated ginger; stir for another minute.
  4. Add cumin, coriander, turmeric, and chili powder to the pan; mix well.
  5. Pour in coconut milk and chicken broth, scraping any browned bits from the pan. Bring to a gentle simmer.
