  • 2 teaspoons extra virgin olive oil
  • Kosher salt & ground black pepper
  • 34 oz smoked salmon
  • 1 English cucumber (sliced)
  • 1 teaspoon capers
  • 1/4 red onion (thinly sliced)
  • 4 sprigs fresh dill
  • 2 tablespoons sour cream (regular or dairy-free)

Instructions

  1. Preheat your oven to 375°F.
  2. Rub both sides of the potato slices with olive oil and season with salt and pepper.
  3. Arrange the seasoned potato slices on a baking sheet and bake for approximately 15 minutes, flipping halfway through until golden brown and crispy.
