  • 1/2 lb beef sausage (spicy or mild)
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 2 large eggs
  • 4 garlic cloves, minced
  • 28 oz canned crushed tomatoes
  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat your smoker to 225°F (107°C).
  2. In a large bowl, combine ground beef and beef sausage until well mixed.
  3. Add breadcrumbs, garlic, Parmesan cheese, parsley, Italian seasoning, and eggs; mix gently until combined.
  4. Form the mixture into golf ball-sized meatballs and place on a parchment-lined tray.
  5. Smoke meatballs for about 1 hour or until they reach an internal temperature of 160°F (71°C).
  6. While smoking, heat olive oil in a saucepan over medium heat. Sauté garlic until fragrant, then stir in crushed tomatoes and simmer for 10 minutes.
  7. Add smoked meatballs to the marinara sauce for an additional five minutes before serving.
