  • 5 ½ cups whole milk
  • 4 cups smoked Gouda cheese, shredded (divided)
  • 4 ounces cream cheese
  • ½ cup all-purpose flour
  • 8 tablespoons unsalted butter (divided)
  • 2 cups Panko bread crumbs
  • ½ cup Parmesan cheese, shredded (divided)
  • 1 tablespoon Dijon mustard
  • 2 teaspoons salt
  • 1/8 teaspoon ground nutmeg
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Preheat your oven to 375°F.
  2. Prepare the topping by combining Panko bread crumbs, 1/4 cup Parmesan cheese, thyme leaves, and melted butter in a bowl.
  3. In a saucepan, heat the milk until hot but not boiling. In another skillet, melt the remaining butter and whisk in flour until golden.
  4. Gradually add hot milk while whisking until thickened into a creamy sauce. Stir in Dijon mustard, salt, nutmeg, black pepper, cayenne pepper, cream cheese, and 3 cups of smoked Gouda until smooth.
  5. Cook elbow pasta according to package directions but reduce cooking time by 2-3 minutes for al dente texture.
  6. Drain pasta and mix with cheese sauce until fully coated.
  7. Transfer mixture to a buttered casserole dish and top with remaining Gouda cheese and breadcrumb mixture.
