  • 1 block (14 oz) firm tofu
  • 1/4 cup white sesame seeds
  • 1/4 cup black sesame seeds
  • 1 cup jasmine rice
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp natural peanut butter
  • 2 tbsp tahini
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • Salt and pepper to taste

Instructions

  1. Press the tofu to remove excess moisture, then cut into cubes.
  2. Mix sesame seeds with salt and pepper; prepare a binding mixture using flaxseed meal if desired.
  3. Coat tofu cubes in the binding mixture, then roll in sesame seeds.
  4. Rinse jasmine rice, then cook it with coconut milk and water until fluffy.
  5. Bake tofu cubes at 400°F (200°C) for about 25 minutes until golden brown.
  6. Prepare the peanut tahini sauce by whisking together ingredients until smooth.
  7. Serve the coconut rice topped with crispy tofu and drizzle with peanut tahini sauce.
