  • 3 medium apples, peeled and diced
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, cubed
  • 1/2 cup heavy cream
  • 1 teaspoon sea salt

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of the pan and bake for 10 minutes.
  3. Beat softened cream cheese until smooth; add sugar gradually, then eggs one at a time, mixing until just combined. Stir in vanilla extract and sour cream.
  4. Pour filling over cooled crust; place in a larger roasting pan filled halfway with hot water and bake for 55-65 minutes until set but slightly jiggly.
  5. Cool gradually in the oven for an hour before chilling in the fridge for at least four hours or overnight.
  6. Cook diced apples in butter with brown sugar and spices until soft; let cool before topping the cheesecake.
  7. For salted caramel sauce, melt sugar until amber; stir in butter, heavy cream, and sea salt once cooled slightly.
