  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon fresh sage, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Zest of one lemon (optional)

Instructions

  1. Thaw the turkey breast in the refrigerator for about 24 hours per 4-5 pounds.
  2. Preheat your oven to 375°F (190°C).
  3. In a bowl, combine softened butter, minced garlic, rosemary, thyme, sage, salt, pepper, and lemon zest.
  4. Pat the turkey dry with paper towels and gently loosen the skin with your fingers.
  5. Spread two-thirds of the garlic herb butter under the skin and rub any remaining over the exterior.
  6. Place the turkey in a roasting pan skin side up and roast for about 20 minutes per pound until an internal temperature reaches 165°F (74°C), basting every 30 minutes.
  7. Let rest for 15-20 minutes before carving.
