  • lbs carrots, peeled and halved
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon smoked paprika (optional)
  • 1 cup whole-milk ricotta cheese
  • 2 tablespoons milk or cream
  • 1 tablespoon olive oil
  • Zest of 1 lemon
  • Salt and pepper to taste
  • ¼ cup honey
  • ½ teaspoon red pepper flakes
  • 1 teaspoon apple cider vinegar

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss the carrot halves in olive oil, salt, pepper, and smoked paprika (if using). Spread them on the baking sheet cut-side down.
  3. Roast for 25–30 minutes, flipping halfway through until tender and caramelized.
  4. While the carrots roast, blend the ricotta, cream (or milk), olive oil, lemon zest, salt, and pepper until smooth and fluffy. Chill until serving.
  5. In a small saucepan over low heat, warm the honey and stir in red pepper flakes and apple cider vinegar. Let it sit for a few minutes to infuse.
  6. Assemble by spreading whipped ricotta on a platter, topping it with roasted carrots, drizzling hot honey over everything, and adding desired garnishes.
