  • 2 tablespoons avocado oil (or other high-heat oil)
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 4 tablespoons butter
  • 2 sprigs fresh herbs (like rosemary or thyme)
  • 4 garlic cloves

Instructions

  1. Bring the steaks to room temperature by removing them from the fridge about 30 to 40 minutes before cooking. Season generously with salt and pepper.
  2. Preheat your cast iron skillet over high heat until very hot. Add avocado oil; once shimmering, place the steaks in the pan.
  3. Sear for approximately 3 to 4 minutes on one side, then flip and cook for another 3 minutes for medium-rare.
