  • Juice and zest of 1 small lemon
  • 1/3 cup vanilla Greek yogurt
  • 1 ¼ cups fresh or frozen raspberries (divided)
  • ¾ cup powdered sugar (or erythritol) for glaze
  • 2 tablespoons fresh lemon juice for glaze

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a muffin tin with liners or non-stick spray.
  2. In a large bowl, whisk together the eggs, vanilla extract, brown sugar, coconut oil, lemon juice, lemon zest, and Greek yogurt until smooth.
  3. In another bowl, mix the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  5. Fold in the raspberries carefully to avoid breaking them up too much.
  6. Divide the batter evenly among muffin cups and top with reserved raspberries.
  7. Bake for about 18-20 minutes or until a toothpick inserted comes out clean.
