  • 1/2 cup unsalted butter, room temp
  • 1/2 cup powdered sugar
  • 1 cup all-purpose flour
  • 2 tbsp cornstarch
  • Pinch of kosher salt
  • 1/2 cup granulated sugar
  • Zest of 1 lemon
  • 1 8 oz block full fat cream cheese, room temp
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 pint fresh raspberries
  • Juice of 2 lemons
  • 3 large eggs
  • 1 cup granulated sugar + 1 tsp for the raspberries
  • 3 tbsp all-purpose flour
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, beat softened butter with powdered sugar until fluffy. Gradually mix in cornstarch, flour, and salt until combined. Press into the bottom of a baking dish.
  2. Bake the crust for 20 minutes until golden. Cool slightly.
  3. For the filling, mix granulated sugar, lemon zest, cream cheese, egg, and vanilla extract until smooth. Spread over cooled crust.
  4. In another bowl, mash half of the raspberries with lemon juice. Mix in eggs, sugar, and flour until blended; fold in remaining whole raspberries. Pour over cheesecake layer.
  5. Bake for 35-40 minutes until set but slightly jiggly in the center. Cool completely before slicing.
