  • 2 tablespoons granulated sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon lemon juice
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 16 ounces full-fat cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs + 1 egg yolk
  • 1/3 cup sour cream, at room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour

Instructions

  1. Prepare the raspberry swirl by combining raspberries, sugar, cornstarch, and lemon juice in a saucepan over medium heat until thickened.
  2. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  3. Make the crust by mixing graham cracker crumbs, sugar, and melted butter; press into the prepared pan and bake for about 8-10 minutes until golden.
  4. Beat cream cheese and sugar in a large bowl until smooth; add eggs one at a time, then incorporate sour cream and vanilla.
  5. Pour cheesecake filling over the cooled crust and swirl in raspberry sauce.
  6. Bake for about 30-35 minutes until set but slightly jiggly in the center. Cool in the oven with door ajar to prevent cracks.
  7. Chill for at least three hours before slicing into squares.
