  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons cornstarch or arrowroot flour
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter
  • â…“ cup sliced almonds
  • ½ lemon (juiced)
  • 3 tablespoons chopped parsley
  • 1 heaping tablespoon drained capers

Instructions

  1. Season the trout filets with salt and pepper after patting them dry. Dust lightly with cornstarch or arrowroot flour.
  2. In a large sauté pan over medium heat, combine olive oil and one tablespoon of butter. Once shimmering, add the trout skin side down; cook for about 3-4 minutes until golden brown. Flip carefully and continue cooking for another 2-3 minutes until cooked through.
  3. Remove trout from the pan and set aside. Wipe out any bits from the pan and melt remaining butter over medium heat. Add sliced almonds and cook until golden brown.
  4. Turn off heat and mix in lemon juice, parsley, and capers into the butter sauce.
  5. Serve trout on plates with sauce spooned generously over each filet.
