  • 2 cloves garlic
  • 1 medium yellow onion
  • 2 medium carrots (sliced)
  • 8 oz mushrooms (sliced)
  • 1 medium zucchini (diced)
  • 1 medium red bell pepper (diced)
  • 1/2 lb rotini (uncooked)
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 2 cups vegetable broth
  • 24 oz pasta sauce
  • Optional: 4 oz mozzarella (shredded)
  • 2 Tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add minced garlic and diced onion; sauté until translucent.
  2. Stir in sliced carrots, mushrooms, zucchini, and red bell pepper. Cook for about 5-7 minutes until softened.
  3. Add uncooked rotini, dried basil, oregano, vegetable broth, and pasta sauce. Stir well to coat the pasta.
  4. Cover and simmer on low heat for 15-20 minutes, stirring occasionally until pasta is tender.
  5. If using mozzarella, sprinkle it on top during the last few minutes of cooking to melt. Serve hot.
