  • 1 pint ricotta cheese
  • 2 large eggs
  • 10 ounces frozen chopped spinach (thawed and drained)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese (divided)
  • 12 manicotti shells
  • 32 ounces spaghetti sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine ricotta cheese, eggs, spinach, mozzarella cheese, half of the Parmesan cheese, sugar, salt, and pepper until well blended.
  3. Use a spoon or piping bag to fill each manicotti shell with the ricotta mixture.
  4. Spread some spaghetti sauce on the bottom of a baking dish. Place the filled shells side by side on top of the sauce.
  5. Pour more spaghetti sauce over the filled shells and sprinkle with remaining Parmesan cheese.
  6. Cover with foil and bake for about 55 minutes or until bubbly.
  7. Let cool slightly before serving.
