  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup canned pumpkin puree
  • ¾ cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • ½ cup all-purpose flour
  • ¼ cup rolled oats

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of the pan for the crust.
  3. Beat softened cream cheese until smooth in another bowl. Add pumpkin puree, brown sugar, eggs, vanilla extract, and pumpkin pie spice; mix well and pour over the crust.
  4. For the streusel topping, combine flour, oats, cold cubed butter, and brown sugar in a bowl until crumbly; sprinkle over the cheesecake layer.
  5. Bake for about 45 minutes until set but slightly jiggly in the center. Cool completely before refrigerating for at least two hours.
