  • 3 2/3 cups bread flour
  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1/3 cup whole milk (room temperature)
  • 1/3 cup heavy cream
  • 1 large egg (room temperature)
  • Tangzhong (from recipe above)
  • 1 teaspoon vanilla paste or extract
  • 6 tablespoons unsalted butter (softened)
  • 2/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup all-purpose flour
  • 3 tablespoons unsalted butter (melted)
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream

Instructions

  1. Prepare the Peach Filling: In a saucepan, combine cubed peaches, granulated sugar, lemon juice, cornstarch, and water. Cook over medium heat until thickened.
  2. Make the Dough: Mix warm water, bread flour, sugar, and let it bubble for yeast activation. Add milk, cream, egg, tangzhong, vanilla paste, and salt. Gradually incorporate more flour until you have a soft dough.
  3. Roll Out & Fill: Once risen (about 1 hour), roll out the dough into a rectangle. Spread the peach filling and sprinkle thinly sliced peaches on top before rolling tightly into a log.
  4. Add Crumb Topping: Mix softened butter with brown sugar, cinnamon, and flour until crumbly. Sprinkle over the rolls before baking.
  5. Bake & Glaze: Bake in a preheated oven at 350°F (175°C) for about 30 minutes until golden brown. Drizzle with cream cheese glaze after cooling slightly.
