  • 1 teaspoon vanilla extract
  • ½ cup peach puree
  • 1 cup unsalted butter, room temperature for frosting
  • 3–4 cups powdered sugar, sifted
  • 3–4 tablespoons peach puree for frosting
  • 1–2 tablespoons sparkling grape juice for frosting
  • Pinch of salt for frosting
  • Fresh peach slices for garnishing
  • Sparkling sugar or granulated sugar for garnishing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in eggs one at a time until well combined.
  5. Mix sparkling grape juice, milk, vanilla extract, and peach puree in a separate bowl.
  6. Gradually add dry ingredients to the creamed mixture alternately with the wet mixture.
  7. Fill cupcake liners about two-thirds full and bake for 18-20 minutes until a toothpick comes out clean.
  8. Allow cupcakes to cool completely before frosting with peach buttercream.
