  • 50 g Dutch processed cocoa powder
  • 160 g all-purpose flour (or gluten-free blend)
  • 1 tsp instant espresso powder
  • 120 g sour cream (room temperature)
  • 75 g vegetable oil
  • 2 large eggs (room temperature)
  • 200 g butter (cool room temperature)
  • 315 g powdered sugar
  • 12 Oreos for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and line your cupcake tin with paper liners.
  2. In a mixing bowl, whisk together boiling water, granulated sugar, cocoa powder, and espresso powder until smooth.
  3. In another bowl, combine flour, baking powder, baking soda, and salt.
  4. Mix sour cream, vegetable oil, eggs, and vanilla extract into the cocoa mixture until just combined.
  5. Gradually fold in the dry ingredients and then gently incorporate crushed Oreos.
  6. Fill cupcake liners evenly and bake for about 22 minutes or until a toothpick comes out clean.
  7. For the frosting, beat butter until creamy; gradually mix in powdered sugar and add vanilla extract and milk until smooth.
  8. Frost cooled cupcakes with Oreo buttercream and top with crumbled Oreos.
