  • 2 cups broccoli, chopped
  • 3 cups diced potatoes
  • 1/2 cup heavy cream
  • 4 oz. shredded sharp cheddar cheese

  1. In a large Dutch oven over medium heat, melt the butter. Add the diced onion, carrots, celery, salt, and pepper; cook for about 10 minutes until the onions are translucent.
  2. Stir in minced garlic and dried herbs (oregano); cook for an additional minute.
  3. Mix in the flour until all vegetables are coated; cook for one more minute.
  4. Deglaze by adding a splash of vegetable broth while scraping up any bits stuck to the pot.
  5. Add potatoes, corn, broccoli, and remaining vegetable broth; season with extra salt and pepper. Bring to a simmer.
  6. Lower heat and cover; simmer for about 10-12 minutes until potatoes are tender.
  7. Remove from heat and stir in heavy cream and shredded cheese until melted.
