If you’re seeking a delightful dish that unites the family, look no further than this One-Pot Broccoli Mac and Cheese! Perfect for busy weeknights or cozy gatherings, this recipe simplifies comfort food with a creamy cheese sauce, tender whole wheat macaroni, and vibrant broccoli—all prepared in one pot for easy cleanup.

Ingredients

Scale
  • 3 ½ cups broccoli florets
  • 12 oz dry whole wheat elbow macaroni
  • 4 tablespoons light butter
  • ¼ cup all-purpose flour
  • 1 ½ cups skim milk
  • 2 ½ cups water
  • 6 oz reduced-fat sharp cheddar cheese (shredded)
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, cook chopped turkey bacon until crispy (or skip for a vegetarian option).
  2. Remove the bacon and drain excess grease. In the same pot, melt butter.
  3. Whisk in flour, salt, and pepper until smooth. Gradually add milk while whisking to prevent lumps.
  4. Add water and bring to a boil; reduce heat and stir in macaroni. Cook for about 8-10 minutes until al dente.
  5. Microwave broccoli for about 2 minutes until bright green. Stir into the pasta along with shredded cheese until melted.
