  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen, fresh, or canned)
  • 1 cup bell pepper (diced)
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 1 can (15 oz) diced tomatoes (with juices)
  • 1 ¾ cups vegetable or chicken broth
  • 1 ½ cups shredded cheese (cheddar, Monterey Jack, or plant-based)
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat. Add diced onion and minced garlic; sauté for 2–3 minutes until softened.
  3. Stir in the bell pepper, corn, black beans, diced tomatoes, cumin, chili powder, smoked paprika, oregano, cayenne pepper (if using), salt, and pepper. Cook for another 2–3 minutes.
  4. Add rinsed quinoa and broth; stir to combine.
  5. Transfer the skillet to the oven and bake uncovered for about 35 minutes until quinoa is fluffy and all liquid is absorbed.
  6. Sprinkle shredded cheese on top and return to the oven for an additional 5 minutes until melted and bubbly.
  7. Let it cool slightly before serving with avocado slices, cilantro, green onions, and lime wedges.
