  • 1 can (14.5 ounces) diced tomatoes (undrained)
  • 4 cups beef broth
  • 1 cup water
  • 1/2 cup long-grain white rice
  • 1 can (15 ounces) black beans (drained and rinsed)
  • 1 cup frozen corn
  • Salt and pepper (to taste)
  • Juice of 1 lime
  • 1/4 cup chopped fresh cilantro
  • Shredded cheese (for topping)
  • Sour cream (for topping)
  • Sliced avocado (for topping)
  • Tortilla strips or chips (for topping)
  • Extra lime wedges (for serving)

Instructions

  1. 1. In a large pot over medium-high heat, heat olive oil. Add ground beef and cook until browned; drain excess fat.
  2. 2. Stir in diced onion, bell pepper, and jalapeño (if using). Sauté for 5 minutes until softened. Add minced garlic and cook for another minute.
  3. 3. Mix in cumin, chili powder, smoked paprika, and oregano; cook for 1 minute. Add diced tomatoes including juice.
  4. 4. Pour in beef broth and water; bring to a boil. Stir in rice, reduce heat to low, and simmer for 15 minutes.
