Mediterranean Lentil Salad is a vibrant, nutritious dish that beautifully combines tender lentils with fresh vegetables and a zesty citrus dressing.   • 1 cup dry lentils (green, brown, or black)
  • 4 cups water
  • 1 bay leaf
  • 1 medium cucumber, diced
  • ½ small red onion, thinly sliced
  • 1½ cups cherry tomatoes, halved
  • ½ cup kalamata olives, halved
  • ½ cup diced roasted red peppers
  • 2 tablespoons fresh mint, minced
  • 2 tablespoons freshly squeezed orange juice
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or agave nectar
  • ¼ cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water in a fine-mesh sieve.
  2. In a medium pot, combine the rinsed lentils, water, and bay leaf. Bring to boil over high heat.
  3. Once boiling, reduce heat to medium-low and simmer covered for about 18-25 minutes until tender but not mushy. Drain and discard the bay leaf.
  4. Let lentils cool in the fridge for about 30 minutes.
  5. In a large bowl, combine cooled lentils with cucumber, red onion, cherry tomatoes, olives, roasted red peppers, oregano, and mint.
  6. In a separate bowl, whisk together orange juice, lemon juice, Dijon mustard, honey/agave nectar, olive oil, salt, and pepper to create the dressing. Pour over the salad and toss gently to combine.
