  • 1 container (14 oz) super firm tofu
  • 3 cloves garlic (minced)
  • 1 ½ tablespoons apple cider vinegar
  • Juice of 1 large lemon
  • 1 teaspoon Green Goddess seasoning
  • 1 teaspoon Za'atar seasoning
  • 4 wooden kabob sticks
  • 1 Persian cucumber (sliced thin)
  • ½ cup grape tomatoes (halved)
  • ¼ cup kalamata olives (sliced)
  • ¼ cup red onions (sliced thin)
  • ⅛ cup fresh dill (chopped)
  • 1 teaspoon maple syrup
  • Hummus for serving
  • Whole wheat pita for serving

Instructions

  1. Start by pressing the super firm tofu to remove excess moisture. Cut it into cubes.
  2. In a bowl, combine minced garlic, apple cider vinegar, lemon juice, Green Goddess seasoning, Za'atar seasoning, and maple syrup to create the marinade.
  3. Add the tofu cubes to the marinade, ensuring they are evenly coated. Let them marinate for at least 30 minutes.
  4. While marinating, prep your vegetables: slice the cucumber, halve the grape tomatoes, slice the olives and red onions, and chop the dill.
  5. Thread marinated tofu and assorted veggies onto wooden skewers in an alternating pattern.
  6. Preheat your grill to medium heat. Grill the kabobs for about 8 minutes total, turning occasionally until golden brown.
  7. Serve hot with hummus and warm whole wheat pita.
