  • 2 stalks celery
  • 1 medium carrot (optional)
  • 2 tablespoons tomato paste
  • 2 teaspoons fresh chopped thyme
  • 4 cloves garlic
  • 1 cup apple cider
  • 1/2 cup pure maple syrup
  • 2 cups beef stock (or vegetable stock)

Instructions

  1. Season short ribs generously with kosher salt and freshly ground black pepper; dust lightly with flour.
  2. In a large pot or Dutch oven, heat olive oil over medium-high heat. Sear short ribs on all sides until browned (about 3–4 minutes per side). Remove and set aside.
  3. In the same pot, sauté diced onion, celery, and optional carrot until softened (5–7 minutes).
  4. Stir in tomato paste and thyme; cook for 1 minute before adding minced garlic until golden.
  5. Deglaze pot with apple cider, scraping any browned bits from the bottom.
  6. Add maple syrup and beef stock; return short ribs to the pot, ensuring they are submerged.
  7. Cover and simmer on low for about 3 hours until fork-tender.
