  • 2 tbsp Sun Dried Tomatoes (chopped)
  • 1/4 cup Feta Cheese (crumbled)
  • 1/4 cup Finely Chopped Red Onion

  • 1/2 tsp Greek Seasoning
  • Salt and pepper (to taste)
  • Lettuce Leaves (for serving)
  • 1 cup Coleslaw Mix
  • 1/4 cup Plain Greek Yogurt
  • 2 tbsp Matchstick Carrots
  • 1/4 cup Green Onions (plus additional for garnish)
  • 1 tsp Apple Cider Vinegar
  • 1 tsp Swerve Confectioner’s Sugar Substitute
  • Salt and pepper (to taste)

Instructions

  1. In a large bowl, combine ground beef, sun-dried tomatoes, feta cheese, red onion, garlic, Greek seasoning, salt, and pepper. Mix gently until well combined.
  2. Heat olive oil in a skillet over medium-high heat. Form the beef mixture into four patties and cook until browned on both sides and cooked through.
  3. For the coleslaw, mix coleslaw mix with Greek yogurt, matchstick carrots, green onions, apple cider vinegar, Swerve confectioner’s sugar substitute, salt, and pepper in another bowl.
  4. Serve the burgers on lettuce leaves topped generously with coleslaw.
