  • 1 cup Coconut Flour
  • 1/2 cup Powdered Sugar Substitute
  • 1/2 cup Coconut Oil (or melted butter)
  • 16 ounces Cream Cheese (softened)
  • 1 Egg
  • 1/3 cup Granulated Sugar Substitute
  • 1 tsp Vanilla Extract
  • 1/2 cup Sugar-Free Chocolate Chips
  • 1 tbsp Coconut Oil (for topping)
  • 1/4 cup Unsweetened Coconut Flakes
  • 2 tbsp Almond Slivers

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine almond flour, coconut flour, and powdered sugar substitute. Mix in coconut oil until a dough forms.
  3. Press the dough into a greased 9×9 baking dish and bake for about 15 minutes or until slightly golden.
  4. In another bowl, mix softened cream cheese, egg, granulated sugar substitute, and vanilla extract until smooth.
  5. Spread the cream cheese mixture over the baked crust and return to the oven for an additional 25-30 minutes or until set.
  6. While cooling, melt chocolate chips and coconut oil together in the microwave. Drizzle half over the cheesecake layer.
  7. Top with shredded coconut and almond slivers, then drizzle with remaining melted chocolate.
  8. Chill in the refrigerator until fully set before slicing into squares.
